Our products are made with heirloom wheat and freshly milled flour.
We are moved by real food, informed by nature’s wisdom and ethical farmers who understand and nurture the soil. The wholesome, heritage grains of organic producers are our primary ingredients, fresh-milled to preserve their unique nutrient density and flavor.
Every one of our pastas is made with freshly milled, organic, whole grain flours. These pre-industrial heirloom and ancient wheats (like Turkey Red, Blue bear Durum and Durum Iraq) are more flavorful, easier to digest and more nutrient-dense than conventional modern wheat. As these grains are seasonal and their protein content varies year-to-year, we use a range of different wheats in our production, which also supports the increased biodiversity of regional farms.
We source grains from organic farmers and mill our flour onsite, ensuring that each batch of our whole grain pasta has exceptional flavor and nutritional value.
